Whipped Strawberry Butter


Ingredients:

  • 1 cup unsalted butter, softened

  • 1/2 cup fresh strawberries, hulled and finely chopped

  • 2 tablespoons powdered sugar

  • 1 teaspoon vanilla extract

  • A pinch of salt (optional)


Instructions:

Prepare the Strawberries:

Wash and hull the strawberries.

Finely chop the strawberries. For a smoother texture, you can also mash them slightly with a fork.


Mix the Butter:

In a medium mixing bowl, add the softened butter.

Using an electric mixer, beat the butter on medium speed until it becomes creamy and smooth.


Add the Strawberries:

Gradually add the finely chopped strawberries to the whipped butter.

Beat the mixture on low speed to combine, ensuring the strawberries are evenly distributed throughout the butter.


Incorporate the Sugar and Flavoring:

Add the powdered sugar, vanilla extract, and a pinch of salt (if using) to the mixture.

Continue to beat on low speed until all ingredients are fully combined and the butter is fluffy.

Adjust Consistency:


If the mixture seems too loose, you can add a little more powdered sugar to thicken it.

Conversely, if it’s too stiff, you can add a teaspoon of milk or cream to soften it.


Chill:

Transfer the whipped strawberry butter to a serving dish or storage container.

Chill in the refrigerator for at least 30 minutes to firm up slightly before serving.


Serve:

Serve the whipped strawberry butter on toast, scones, pancakes, or muffins. It also makes a delightful topping for waffles or biscuits.


Storage:

Store any leftover butter in an airtight container in the refrigerator. It will keep well for up to one week.


For longer storage, you can freeze the butter. Wrap it tightly in plastic wrap and place it in a freezer-safe bag or container. Thaw in the refrigerator before using.
